This recipe is inspired by this post seen on Special Edition Tumblring. In Rainbow Rowell's Fangirl, one of the characters, Levi, works at Starburcks and makes up his own drink. In the original blog post she details what you need to say to order the drink at Starbucks. Here is an at home version of the drink which you can make year round, and change up to your liking.
Note: We have included the recipe to the Pumpkin Spice Syrup, Chai Tea Syrup, and Chai Whipped Cream. You can buy both syrups premade (we found some at Homegoods and T.J. Maxx) and use regular whipped cream, but the taste of the final drink will vary depending on the syrup brand.
Pumpkin Spice Syrup
1 1/4 cups water
3 tablespoons pumpkin pie spice
2 teaspoons vanilla extract
1 cup caster sugar
Put water and spice in to a small saucepan. Simmer over medium heat for 15 minutes. Strain mixture through a fine mesh sieve. Rinse out saucepan to get rid of any spice that might have been left behind. Return spice/water mixture to clean saucepan, add sugar, and vanilla extract. Bring to a boil, and then allow it to cool to room temperature.
Chai Tea Syrup
1 1/4 cups water
4 chai tea sachets
1 cup caster sugar
Bring water to a boil. Put tea bags in water and steep for 10 minutes. Take out the tea bags, and throw them out. Put the tea in to a small saucepan, add sugar, and bring to a boil. The syrup is ready, just remember to let it cool to room temperature. Syrups keep for about 2 weeks.
Chai Whipped Cream
1/4 cup whipping cream
1 teaspoon sugar
2 tablespoons chai tea syrup
Chill bowl and whisk for 10 minutes in the freezer. Put the whipping cream and sugar into the bowl (make sure it's dry). Whip with the cold whisk until the cream forms stiff peaks. Fold the chai tea syrup in until it's combined. This keeps for about a week. If you store it in your fridge, you might want to whip it a little before using.
Now it's time to put it all together!
Pumpkin Mocha Breve
1 tablespoon chocolate syrup (plus more for drizzling)
4 tablespoons pumpkin spice syrup
2 tablespoons chai tea syrup
3/4 cup coffee (black/without anything added)
1 cup milk
Chai whipped cream
Cinnamon/Cinnamon Sugar
Drizzle chocolate syrup into the bottom of the mug that you'll be using. Add in the pumpkin spice syrup and chai tea syrup. Put the coffee in and gently mix together.
Now you are going to froth the milk. You can use a milk frother, or you can pour the milk into a jar, shake it vigorously, and microwave for about 30 seconds.
Using a spoon to hold back the foam, pour the milk in. Spoon the leftover foam onto the top.
You can put the whipped cream into a piping bag to make your drink look fancy.
Top it off with the chai whipped cream, drizzle some chocolate syrup, sprinkle a little cinnamon on top, and there you go.
